Cupcake Throwdown?
After a quick turnaround, lydia and I managed to throw together a nice set of red velvet cupcakes for the San Francisco Cupcake Club meetup. Questions I need to answer for myself, does almond extract make a difference, would beet juice/beet baby food make it more moist, should i bake them in a water bath next time! QUESTIONS THAT NEED TO BE ANSWERED. Anyway, I think we did pretty damn well. The frosting was really rich and creamy and held up well in the heat. The recipe for the frosting was pretty simple, butter, cream cheese, powdered sugar and a splash of vanilla extract. I know we need to go over the top next time, and I'm planning big already. Here's another picture...they are as good as they look.
